Also, I have a helpful tip for busy people who sometimes don't eat properly due to time restrictions.
Cook ahead of time. Nothing big. Infact, small, quick, and easy is best. I just made a whole tupperware of tuna salad and put it in the fridge. Now, anytime in the week if Scott or I get too busy to make a good lunch . . . we've got tuna salad made. It lasts a good week in the fridge. If we don't use it for lunches by the end of the week, we can simply make a dinner one night tuna salad.
Another thing that helps us with time restrictions and dinner is cooking BIG. That way we have left overs. I know this stuff sounds common sense, but so many people worry about meals day by day, lunch by lunch, and dinner by dinner. That leads to fast food or junk food.
Tonight I prepared a whole chicken with veggies, onions, and potatoes. I made a small side of cream and salt free risotto. I didn't need to make much risotto because with all the veggies and potatoes that will be very filling. That meal will last us a few dinners in addition to tonight's dinner.
